The casual and welcoming Brookfield, Connecticut, dining establishment, 189 Sports Cafe, known in past years as Chris’s American Restaurant and Fiddler’s Restaurant, owes a large part of its success to Chris Bruno. As a culinary chef and restaurant consultant, Chris Bruno brought a wealth of restaurant experience to assist the new owners with the opening of 189 Sports Cafe. Chris Bruno graduated from Johnson & Wales University in 1987 and worked as a Saute Chef in Cape Cod, Massachusetts. Soon after, Chris Bruno became a Chef at Scrimshaw's Restaurant in Brookfield, Connecticut, near the area where Chris’s American Restaurant would be located. With an eye on new opportunities, Chris Bruno committed his culinary talents toward becoming a Sous Chef for an establishment named L'Europe Restaurant (now One Twenty Three Restaurant and Bar), located in Vista, New York. There, Chris Bruno was an apprentice to an Austrian Chef who was instrumental to L’Europe’s success and later influenced the menu options at Chris’s American Restaurant. With additional training from a French Saucier, Chris Bruno was able to bring French and Continental European techniques into his repertoire and expand the cuisine selection of Chris’s American Restaurant into a varied, diverse menu. As the ingredient availability changed, Chris Bruno created new combinations that merged the traditions of the older Fiddler’s Restaurant in Brookfield with the modern, updated Chris’s American Restaurant.   | Blog | Oct 20, 2011 |
